The study of acetic acid bacteria present in some oenological products from the country side of Perugia showed that Acetobacter aceti var. aceti, A. pasterianus var. pasterianus and Gluconobacter oxidans were the dominant microflora whereas the presence of Acetobacter aceti var. xilinum was considered occasional. The analytical characters of vinegar, produced using five strains of each acetic acid isolated species as fermentation starters, showed valuable information on their technological attitudes

Prove di acetificazione, condotte con cinque ceppi di ogni specie ritenuta dominante, hanno fornito interessanti informazioni sull'attitudine acidificante dei ceppi impiegati
