Oil products with potential for development include: oils rich in wax esters from orange roughy and other species; squalene and other components from the livers of deep-sea sharks; and oils enriched in omega-3 polyunsaturated fatty acids from Australian species. Progress on the characterization of such oils and the manufacture of value-added products is reported. Value-added marine oil products can be manufactured from both the by-catch of established fisheries and from waste generated from seafood processing.
