Chemical composition of milk of Sicilian goats in relation to the age of the animal and its lactation period

إنجليزي. Sicilian goats represent 15% of the whole national recources. They are often in inland areas, (Peloritani, Nebrodi) and consist of hybrids and mixed breeds considered to be aboriginal. In the past few years they have become object of attention for both the quality of production and for the low cost of breeding. The aim of the study conducted on the milk of these animals was to gain a better knowledge of the chemical composition of this product by taking into account (as a variable) both the age of the animal and its lactation period. The composition of the lipid fraction and the fatty acid content, both quantitatively and qualitatively, were studied. Our results indicate that the lactation period, more than the different order of delivery, conditions greatly the acid composition of the milk. It is interesting to note how the relationship between the single fatty acids (C4/C6+C8 - C12/C10, Unsat/Sat) is stable and is not modified by any of the two variables taken into account

إيطالي. Il patrimonio caprino siciliano rappresenta il 15% dell'intero patrimonio nazionale. Dislocato spesso in aree interne, (Peloritani, Nebrodi), e costituito per la maggior parte da popolazioni meticcie e polimeticcie considerate autoctone, e' stato in questi ultimi anni oggetto di interesse sia per la qualita' della produzione che per il bassissimo costo di gestione dell'allevamento. L'indagine condotta sul latte di questi animali ha come scopo la migliore conoscenza della composizione chimica di tale prodotto, considerando come variabili sia l'eta' dell'animale che il periodo della lattazione. E' stata studiata la composizione della frazione lipidica ed il contenuto quali-quantitativo in acidi grassi. Dalle determinazioni effettuate appare evidente come il periodo di lattazione, piu' che il differente ordine di parto, condizioni maggiormente la composizione acidica del latte. Interessante notare infine come i rapporti tra i singoli acidi grassi (C4/C6+C8 - C12/C10 - insat./sat.) si presentano stabili e non vengono modificati da nessuna delle due variabili considerate
