Use of commercial starter cultures in the production of Soppressa Lucana, a fermented sausage from Basilicata

Soppressa Lucana, a fermented sausage produced in Basilicata, was manufactured using traditional technology (C) or by addition of commercial starter cultures composed of Staphylococcus xylosus (S), Lactobacillus pentosus and Pediococcus pentosaceus (L+P) or a combination of the three strains (L+P+S). Physico-chemical, chemical and microbiological parameters were monitored throughout the ripening process. Acid production and pH decrease were more intense in sausages produced with the addition of lactic starters (L+P+S). All the starters caused an increase in the free fatty acid content of the sausages. Use of starters containing nitrate-reducing S. xylosus (S and L+P+S) improved color formation. Sensory evaluation showed that only treatment S was significantly different from the control in flavor/aroma, while all treatments were significantly different from the control when color was considered

E' stato valutato l'uso di colture starter commerciali composte da Staphylococcus xylosus (S), da Lactobacillus pentosus e Pediococcus pentosaceus (L+P) o da una combinazione dei tre ceppi (L+P+S) nella produzione di Soppressa Lucana, un insaccato tipico della Basilicata. L'uso di fermenti lattici causava una piu' rapida e intensa acidificazione rispetto al controllo (C). Tutti gli starter determinavano un aumento del contenuto in acidi grassi liberi. Gli starter, specialmente quelli contenenti ceppi nitrato riducenti, determinavano un miglioramento del colore. In base all'analisi sensoriale, soltanto il prodotto ottenuto con il trattamento S aveva un sapore/aroma significativamente differente dal controllo, mentre tutti i trattamenti con l'aggiunta di starter erano significativamente differenti dal controllo per il colore
