The international symposium on rice quality held in Nottingham, UK - November 24-27 1997, was the achievement of European Union Concerted Action (EC-DGVI noAIR3-CT94-2518) "Quality and Competitiveness of European Rices". This concerted action ran throughout years 1995 to 1998. During these years, rice scientists in Europe organised several meetings and published papers in CIHEAM series "Cahiers Options Mediterraneennes". The problematic to be worked out during this seminar was : the evolution of the international and domestic rice markets, in rich countries, particularly in Europe, points out the increasing role of the quality as an important factor of economic competitiveness. Rice contributes to the diversification of the food diet which is linked to a strong market segmentation and, therefore, the multiplication of the market products. These changes entail essential needs to define and measure qualities for control or elaboration of the quality in each step from production to consumption. European rice scientists here present their findings, compare and discuss them with the international state of art, and with all the actors interested in rice production and industry.
