Seed protein fractions of amaranth (Amaranthus)

The percentages of seed protein fractions for four amaranth species (Amaranthus caudatus, A. cruentus, A. hypochondriacus and A. paniculatus) are presented. Analyzed probes were taken from unfertilized variants during three years. The N-values obtained for the particular extracted fractions are given as the percentage of N-substances to their total amount in the seed dry matter. The evaluation of the three-year results shows the statistically highly significant effect of the researched amaranth species on the content of all fractions and the crude protein, as well. The highest content of the raw protein, was determined for A. cruentus (17.20 % on average), whereas the lowest one had A. hypochondriacus (15.72 % on average). The interaction between the species and the years was statistically significant only for prolamins. The portion of albumins and globulins was in the range from 66.18 % for A. paniculatus to 76.14 % for A. hypochondriacus.
