A parallel processing algorithm was grounded on the inverse problem approach, optimisation procedures, the mathematical model for the direct heat and moisture transport problems, and the parallel processing concept. This approach can be used to solve efficiently inverse problems of heat and moisture transport in complex agricultural products. It can handle transient character of the process, natural boundary conditions, nonhomogeneity and geometric irregularity of three-dimensional objects, and dependence of the transport coefficients on temperature and moisture content. Parallel processing applied to perform simulations resulted in a significant increase in effectiveness of computations. It also resulted in a considerable increase in accuracy, as it was possible to deal with more complex problems
