In this paper the effects of two different rations on the quantity and quality of milk produced in two dairy herds is described. The two rations differed mainly in having different starch and fiber content, the ration with the lowest starch content was prepared with a base of dried hay of very high quality. The effect on milk quality was determined by comparing average daily milk yield, fat and protein content and by calculating the average production of milk fat and protein. The herd fed the lowest starch concentration and the best hay had the best production figures in quantity and quality of milk. Average daily fat production was always better in the herd fed the low starch diet, with differences ranging from 28 to 292 grams. The same was observed for protein production, the daily average difference ranging between 30 and 301 grams
