Analysis of the changes in moisture content during drying of root celery

The study aimed at describing moisture content changes in root celery dried by forced convection, with the use of mathematical models, and investigating the effect of temperature (50, 60, 75 deg C) on drying rate. In laboratory experiment the cubes (1x1x1 cm) of celery were dried in a convection drier with forced air circulation. The volume of dried material was determined and its microscopic image was computer processed. Assumed models of drying periods, the first where superficial mass exchange dominates, and the second one, with mass diffusion from inside the sample, were correctly verified empirically. The temperature rise within applied range cut down (by about 40%) the drying time
