The effect of ethephon on the quality of conventional olive oil and the effect of irrigation and storage on the quality of organic olive oil

Olive trees cv. Koroneiki grown in Nerokourou, Chania were sprayed once with 1700ppm ethephon, normal treatment and twice with 850ppm ethephon, repeated treatment at 10 days interval between applications. The result of both treatments were compared to untreated fruit (control). The qualitative changes were evaluated an olive fruit and oil samples during a 20 day period after the treatment. Ethephon had no effect on the average fruit weight and moisture content while oil content increased. Titratable acidity and the peroxide value of ethephon treated oil were higher than the control. Oxidative stability and total phenols were higher in the control than either normal or repeated ethephon treatments. Specific absorbence coefficients K232 and K270 increased slowly in the control oil while in the normal and repeated treatment, they increased faster.
