Through a careful analysis of the liqueur-like drinks on the market, it was observed that their labels do not include any specifications concerning the real ingredients used in their processing; in fact these ingredients are generically labelled as aromas. It is then necessary to protect higher quality products such as the lemon liqueur of the Campania area obtained by using the typical lemon from Sorrento. Our research group tried to analyse the characterisation of the aroma component and its fractions through the HPLC analytical technique

Attraverso un'attenta analisi nel settore delle bevande liquorose, presenti sul mercato, si nota che in etichetta, spesso, esse non riportano alcuna dichiarazione dei reali ingredienti utilizzati nella preparazione, indicandoli genericamente come aromi. Nasce, quindi, l'esigenza di tutelare prodotti qualitativamente superiori come puo' considerarsi il liquore di limone dell'area campana, perche' ottenuto con il caratteristico limone di Sorrento. il nostro gruppo di ricerca ha cercato di approfondire la caratterizzazione della componente aromatica e delle sue frazioni, attraverso l'utilizzo della tecnica analitica HPLC
