[This study was aimed at contributing to the evaluation of rheological parameters of milk of Massese ewes housed and fed hay and concentrates supplemented with proteins at low rumen degradability, compared with grazing on a natural pasture. The best coagulation properties were found in milk of grazing ewes, compared with that of housed ones, but differences tended to disappear when diet was supplemented with low degradability proteins]

Lo studio ha voluto dare un contributo alla valutazione dei parametri lattodinamografici del latte di pecore Massesi, alimentate normalmente al pascolo, qualora vengano allevate a stabulazione fissa e razionate con diete a base di fieno e mangimi integrati con proteine a bassa degradabilita' ruminale. La migliore attitudine alla coagulazione del latte e' stata riscontrata nei soggetti alimentati al pascolo rispetto a quelli stabulati, ma le differenze tendevano a scomparire quando la dieta e' stata integrata da una quota proteica
