Non conventional antimicrobial substances in tea-based soft-drinks

إنجليزي. In this work the antimicrobial activity of some molecules (hexanal, trans-2-hexenal and hexan-1-ol) not commonly used as preservatives in food products has been assessed. These molecules are produced by plants through the lipooxygenase pathway and they are fundamental constituents of the aroma of several vegetables and fruits. For this reason, they are compatible with the organoleptic characteristics of many food products. Their antimicrobial activity has been tested in commercial tea-based soft-drink, inoculated with a spoilage yeast strain belonging to the genus Zygosaccharomyces. Two of the tested compounds possessed interesting inhibiting activities on the yeast, especially if used in combination. Moreover, the importance of the temperature on the antimicrobial activity of the molecules has been stressed. In fact, this physical parameter influenced their vapour pressure and, consequently, their ability to reach the microbial cells and to inhibit their multiplication

In questo lavoro e' stata verificata l'attivita' antimicrobica di alcune molecole (esanale, trans-2-esenale, esan-1-olo) non utilizzate convenzionalmente nei prodotti alimentari come conservanti. Queste molecole sono prodotte dalle piante attraverso la via della lipossigenasi e sono costituenti fondamentali dell'aroma di molti vegetali e pertanto compatibili con diversi prodotti alimentari. La loro attivita' antimicrobica e' stata saggiata in bevande commerciali a base di te' inoculate con un ceppo di lievito degradativo appartenente al genere Zygosaccharomyces. Due delle sostanze testate hanno mostrato di possedere significative attivita' inibenti nei confronti dei lievito, soprattutto se usate in combinazione. E' stata inoltre sottolineata l'importanza che la temperatura riveste sull'attivita' antimicrobica delle sostanze di questo tipo, influenzandone la tensione di vapore e, conseguentemente, la possibilita' di entrare in contatto con le cellule microbiche, inibendone la moltiplicazione
