The identification of the substances limited by the Italian law in force (D.L. n. 107, 25.01.1992, concerning the production and the commercialization of flavours) with reliable analytical techniques is a subject of great interest. Moreover it seems to be in project the extension of the limited substances list to include other compounds with structure similar to that of already regulated compounds. The identification and quantification of the above mentioned substances require sensible analytical techniques because of the low contents to be determined: GC/MS and CC/HRMS (High Resolution MS) techniques respond to this requirement. The paper reports analytical data for the identification of safrole, methyl-eugenol, myristicin and elemicin: these substances are commonly present in cola beverages formulated with oils or oleoresins or extracts containing safrole and safrole-like compounds

L'identificazione con tecniche analitiche di sicura affidabilita' dei composti limitati dal D.L. n. 107 dei 25.01.1992, che recepisce le Direttive 88/388/CE e 91/71/CE in tema di produzione e commercializzazione degli aromi, costituisce problematica di attuale interesse in considerazione dell'auspicata estensione della limitazione ad una serie di molecole di struttura simile a quella dei composti limitati attualmente e compresi nell'All. V riportato nel testo della normativa. Auspicato e' l'allargamento della limitazione almeno per quei composti che posseggono caratteristiche strutturali che non ne garantiscono in assoluto la sicurezza d'uso. Le quantita' di tali composti in gioco sono tuttavia tanto ridotte da richiedere l'applicazione di tecniche di identificazione di sicuro significato: l'impiego di GC/MS e di GC/HRMS (MS alta risoluzione) consente la soluzione di tale problematica. Questa nota riporta le informazioni necessarie per la sicura identificazione, estensibili alla determinazione quantitativa di safrolo, metil-eugenolo, miristicina ed elemicina: tali sostanze sono comunemente contenute in bevande alla cola in ragione dell'impiego, nella formulazione dell'aroma, di oli essenziali che ne contengono
