Chemical analysis of the volatile fraction and the ethyl acetate extract of dried stamens of Crocus sativus L.

Nothing has been reported until now about the volatile components of dried stamens of Crocus sativus L. although saffron (the dried stigmas of the same plant) has been investigated extensively. Concerning the non-volatile compounds the only information found in literature was that stamens do not contain crocin. The major identified volatile constituents of dried stamens were isophorone 2,6,6-trimethyl-1,3-cyclohexadiene-1-caclohexaldehyde (Safranal), benzenacetaldehyde, 2,6,6-trimethyl-cyclohex-2-ene-1,4-dione, 4,4,6-trimethyl-cyclohexadiene-2,5-ol-2-one-1, 3,5,5-trimethyl-4-methylenecyclohex-2-en-1-one, 2,6,6-trimethyl-1,4-cyclohexadione, heptanioc acid and benzeneethanol. In addition fifteen more volatile constituents have been identified. A 7-O-rhamnoglucoside of a 4-methoxy-, 5-7-dihydroxy-isoflavone, was isolated for a first time from the AcOEt extract and its structure was elucidated by spectroscopic techniques (UV-Visible, PMR, EIMS, CIMS)
