Optimization of hexanal production by vegetal enzymatic system

This study consists of optimizing the yield of the conversion of linoleic acid into hexanal. As this bioconversion is due to a vegetal enzymic system (lipoxygenase and hydroperoxyde lyase), the actual study is donein order to select the most performant vegetable (source of hydroperoxyde) concerning the production of hexanal from an emulsion of the linoleic acid and an aqueous extract of soybean flour (source of lipoxygenase). The next step consists of optimizing hexanal yield by adding activators of the HPL enzyme and varying the enzyme/ substrate ratio. The final step is the reduction of the reactional volumes in order to achieve an economic reduction of the production costs. Best yields were observed by using the green beans as a source of the HPL enzyme, with the addition of 0.15 per cent of tween 80 and the best enzyme/ substrate ratio (g/g) obtained was 63
