إنجليزي. Ricotta is considered a precious food for its nutritional and dietetic characteristics and it plays a very important role in modern diet. In order to satisfy the increasing demand of ricotta, the traditional technology of production has been modified adding milk to whey (fortification). Such a kind of addition grants higher productions and an improvement of organoleptic characteristics, but alters the protein composition of the product. The electrophoresis technique SDS page gradient 8-18 has been used in order to quantify the possible mixture of milk to whey. The results have shown a fortification of whey with milk in a large number of samples; often it was about 40% and more. The AA, in comparing the results obtained with the composition reported in the label, have often noticed discordance and misleading publicity. Consequently they suggest the emanation of specific norms and standards in order to protect ricotta quality
اظهر المزيد [+] اقل [-]إيطالي. La ricotta e' considerata un prezioso alimento sotto l'aspetto nutrizionale e dietetico, tanto che ha assunto un ruolo preminente nell'alimentazione moderna. Alla pressante richiesta del prodotto sul mercato e' stato possibile far fronte con una tecnologia produttiva diversa da quella tradizionale, che prevede l'aggiunta di latte al siero; cio' consente una resa maggiore e un miglioramento delle qualita' organolettiche, ma modifica sostanzialmente la composizione proteica. Utilizzando l'elettroforesi SDS in gradiente e' stato possibile evidenziare come nella quasi totalita' delle ricotte poste in commercio sono presenti le caseine, in quantita' tali da far presupporre una 'fortificazione' del siero con il 40% e oltre di latte. Inoltre l'etichetta dei campioni esaminati, non rinvenuta in tutti, e' risultata spesso errata o non rispondente a quanto richiesto dal D.L. vo 109/92. Pertanto gli AA auspicano precise norme e leggi che definiscano chiaramente la ricotta e le sue caratteristiche merceologiche, per offrire maggiore chiarezza e garanzie ai consumatori
