Fatty acids composition of medlar (Mespilus germanica L.) fruit at different stages of development

إنجليزي. Changes in the fatty acid composition at different stages of development in the mesocarp of medlar (Mespilus germanica L.) fruit was studied by gas liquid chromatography (GLC). Twenty different fatty acids were identified, 10 of which were saturated and 10 unsaturated. The total fatty acid content of the fruit changed throughout development, reaching a maximum value of 6,121 microng/g dry wt by mid-August and thereafter declining to a value of 2,583 microng/g dry wt in the fully ripe fruit (October). Linoleic acid (C 18:2n-6) contributed most to the percent composition of the total fatty acids in the lipid extract at all five stages of development, contributing 51% of the total fatty acid content (1,291.7 microng/g dry wt) in fruit harvested in October. Even in the ripest fruit, alpha-linolenic (18:3n-3) acid contributed 13.5% to the total fatty acid content at 359.9 microng/g dry wt. إيطالي. I cambiamenti di composizione del mesocarpo del nespolo (Mespilus germanica L.) a diversi stadi di sviluppo sono stati esaminati mediante gascromatografia (GLC). Sono stati identificati 20 acidi grassi, di cui 10 saturi e 10 insaturi. Il contenuto totale in acidi grassi del frutto cambia nel corso del suo sviluppo, raggiungendo un valore massimo di 6.121 microng/g di peso secco a meta' agosto per poi diminuire a valori di 2.583 microng/g di peso secco a piena maturazione (ottobre). L'acido linoleico (C 18:2n-6) e' il piu' rappresentativo fra gli acidi grassi in tutti e cinque gli stadi di sviluppo, raggiungendo il 51% del contenuto totale (1.291,7 microng/g di peso secco) nei frutti raccolti in ottobre. Anche nei frutti piu' maturi, l'acido alfa-linolenico (18:3n-3) contribuisce per il 13,5% del contenuto totale con valori di 359,9 microng/g di peso secco.
