An examination of the Greek olive oil supply chain within the context of supply chain management

This study introduces and analyses the evolution of logistics from a purely operational function to a fundamental strategic component of distribution systems, and further still to the final stage of evolution, known as Supply Chain Management (SCM). It then analyses the Greek olive oil supply channel in order to provide detailed information concerning the extent to which the current channel realizes its opportunities in the global marketplace. Data collected using questionnaires in a market survey in the areas of Athens, Thessaloniki and Crete were used to identify the weak links in the olive oil channel and to spot the problems located in the fields of production, promotion and distribution of the product. The data recorded in the market survey were: quantitative data, preferences, purchasing criteria, quality criteria, buying procedures, awareness of organic products and attitudes of firms towards conventional and organic olive oil. Several data analysis techniques, namely descriptive statistics, univariate and bivariate statistics and correspondance analysis were used in this research.
