[Evaluation of antioxidant power of phenolic compounds contained in oil mill waste waters]

إنجليزي. By using a reproducible analytical methodology, based on the Swift's test, the antioxidizing activity of the oil mill wastewater phenols has been evaluated. These studies are progressing well. All tests have been carried out using phenol standards which have been dissolved in refined or purified virgin olive oil. All standards had an identical concentration. BHA (2,3-tert-butyl-4-hydroxyanisole), BHT (3,5-di-tert-butyl-4-hydroxytoluene), and other substances were the reference synthetic antioxidants. We are preparing a table classifying the wastewater phenol compounds into 4 groups, such as: (i) highly antioxidizing phenols; (ii) fairly antioxidizing phenols; (iii) lightly antioxidizing phenols; (iv) phenols without antioxidizing power. It is evident the importance of these studies in the framework of the oil mill wastewater phenol recovery and re-use of these natural antioxidants, in place of the synthetic ones, for the preservation of agro-food items

إيطالي. Utilizzando una metodologia riproducibile, basata sul test di Swift, e' stato valutato il potere antiossidante delle sostanze fenoliche contenute nel refluo. Lo studio e' ancora in corso. I test sono stati effettuati su standard fenolici sciolti in olio di oliva vergine purificato o raffinato. Le concentrazioni erano uguali per tutti gli standard. Come antiossidanti di riferimento sono stati presi il BHA (2,3-tert-butil-4-idrossianisolo), il BHT (3,5-di-tert-butil-4-idrossitoluene) e altre sostanze sintetiche. E' in corso di preparazione un prospetto riassuntivo completo in cui le sostanze fenoliche contenute nel refluo vengono classificate in 4 categorie: (i)fenoli altamente antiossidanti; (ii)fenoli mediamente antiossidanti; (iii)fenoli lievemente antiossidanti; (iv) fenoli privi di azione antiossidante. E' evidente l'importanza di questo studio, in vista del recupero dei fenoli dalle acque di vegetazione e del loro reimpiego, in sostituzione degli antiossidanti sintetici, nell'industria agroalimentare
