[Nutritive value of mushrooms and usefulness of their utilization in human feeding]

After the definition of the Alimentation/Nutrition System as well as of food groups (cereals and derivates, legumes, greens and vegetable crops - including also mushrooms -, fruits, meat and derivatives, fishing products, milk and derivatives, eggs and cakes) and nutrient substances (proteins, carbohydrates, lipids, vitamins and mineral salts), mushroom nutritional components and biological value are evaluated and compared to those of other foods. Fresh mushrooms, like other vegetable crops and greens, on an average contain 90% H20, 2.3-4% proteins, 0.4-0.6 lipids, 1.6% soluble carbohydrates, 1.7-2.5% unavailable polysaccharides, i.e. alimentary fibre. Furthermore, they contain vitamins (C, B2, B6, PP, K, D) (1-7 mg/100 g fresh weight) and mineral salts (0.8-1.2%). Mushrooms should be used in human alimentation following the variety and moderation rule

Dopo aver definito il sistema Alimentazione/Nutrizione, i gruppi di alimenti (cereali, legumi, verdure ed ortaggi - comprendenti anche i funghi -, frutta, carne e derivati, prodotti della pesca, latte e derivati, uova e dolci) e le sostanze nutritive (proteine, carboidrati, lipidi, vitamine e sali minerali), vengono valutate le componenti nutrizionali e il valore biologico dei funghi paragonandoli a quelli di altri alimenti. Come altri ortaggi e verdure, i funghi freschi contengono in media il 90% di H2O, il 2,3-4% di proteine, lo 0,4-0,6% di grassi, l'1,6% di glucidi, l'1,7-2,5% di fibra alimentare o polisaccaridi non disponibili. Sono presenti, inoltre, vitamine (C, B2, B6, PP, K, D) e sali minerali (0,8-1,2%). Il consumo di funghi va compreso nell'alimentazione umana rispettando la regola della varieta' e moderazione
