Effect of sodium lactate and potassium sorbate on quality characteristics and shelf-life of Mediterranean mussel (Mytilus galloprovincialis) meat during chilled storage in pouches with water

إنجليزي. The quality characteristics and shelf-life of Mediterranean mussel (Mytilus galloprovincialis) meat (shucked mussels), stored at 5 +- 2 deg C in plastic pouches with water, were studied. The control was 150 g of mussel meat with 150 ml of water. Sodium lactate (1% and 2%) and potassium sorbate (0.35%) were added to 150 g of mussel meat in 150 ml of water. Potassium sorbate significantly (P0.05) retarded the growth of mesophilic aerobic bacteria and psychrotrophic bacteria and, especially, the growth of lactic acid bacteria. In mussel meat with potassium sorbate, the pH was slightly reduced and the total volatile basic nitrogen (TVBN) and thiobarbituric acid (TBA) values were significantly (P0.05) lower than all other treatments. Based on sensory attributes, the shelf-life of the product with potassium sorbate was increased from 6 to 8 days. The potassium sorbate content of the mussel meat was initially less than 0.185% and, after the 5th day, less than 0.15%. The shelf-life of the control was 6 days. Sodium lactate at both levels had no effect (P0.05) on microbial counts, TVBN and TBA and shelf-life, but the pH was higher (P0.05) than the control at the end of the storage period and the mussels were saltier

Sono state studiate le caratteristiche qualitative e la vita di scaffale della carne di vongole mediterranee (Mytilus galloprovincialis) conservata in acqua a 5 +- 2 gradi C in sacche di plastica. Al controllo (150 g di carne di vongole in 150 ml di H2O) sono stati aggiunti, rispettivamente, 1 e 2% di lattato di sodio e sorbato di potassio (0,35%). Il sorbato di potassio ha ritardato in modo significativo (P0,05) la crescita di batteri aerobi mesofili e psicrotrofi e, in particolare, la crescita di batteri lattici. Nei campioni con sorbato, il pH si e' debolmente ridotto e i valori di TVBN e TBA sono stati significativamente (P0,05) piu' bassi di quelli degli altri trattamenti. Sulla base degli attributi sensoriali, la vita di scaffale delle vongole aggiunte di sorbato di potassio e' aumentata da 6 a 8 gg. Il contenuto di sorbato di potassio e' stato inizialmente inferiore allo 0,185% e, dopo il quinto giorno, allo 0,15%. La vita di scaffale del controllo e' stata di 6 giorni. Il lattato di sodio, ad ambedue i livelli di concentrazione, non ha mostrato effetti (P0,05) sulla conta microbica totale e i valori di TVBN e TBA e sulla vita di scaffale. Il valore del pH, invece, e' stato significativamente (P0,05) piu' elevato del controllo; alla fine del periodo di conservazione le vongole sono apparse piu' salate
