Solar drying adds value to surplus fruit and vegetables

In Burkina Faso production from market gardening has tripled in less than ten years, mainly because water resources are being better used. This has meant that at harvest time local markets are now frequently over-supplied. As a result prices plummet and unsold produce, perhaps as much as 20% of production, is wasted. ABAC-GERES, an NGO promoting north-south cooperation, has introduced a domestic solar dryer which is of simple construction and easy to use. The largest model can dry a fresh weight of 15 kg a day.
