The depletion of marine resources and the overexploitation of commercial species are compromising the environmental sustainability of the seas and oceans and the continuity of small- scale fishing operations. The utilization or introduction of low-value or less-consumed species is a strategy that reduces fishing pressure on target species while providing potential higher benefits to fishermen. The work aims to assess the feasibility of marketing the sardinella (Sardinella aurita) by the food industry. Through preliminary market research, consumer studies, and technical, economic, and logistical feasibility analyses, several products that could be produced by a small industry have been identified. The research has examined the feasibility of each of these products based on various factors, highlighting the need to continue research and initiate product testing to determine the most viable option.
