The paper is a brief description of the protein content of whey, which makes up about 20% of milk protein. Whey proteins are well-structured proteins with stable secondary and tertiary branches. The main major protein components of whey are β-lactoglobulin, α-lactalbumin, bovine serum albumin and immunoglobulins. Such proteins as lactoperoxidase, serum transferrin, lactoferrin, lactolin and the protein-peptone fraction represent the so-called 'minor' proteins of the whey protein content.
