Cattle fattening in the organic farming system by using grass fodder is considered an environmentally friendly meat production solution that prevents direct competition for human food. The research on final fattening of beef cattle for the production of quality meat was carried out under production conditions (2019–2022) with nine groups of Limousin and six Angus breed animals. During the final fattening period the forage rations was calculated corresponding to their sex, age and live weight. The basic feed was silage and supplemented with grain and molasses. The costs of the final fattening period were compared with the revenues from sold products in the slaughterhouse. For animals of the Limousin breed, it is more economically advantageous to start final fattening after reaching 600 kg of live weight and to continue it no longer than 2 months due to high costs. For Angus animals the final fattening period can be 1–5 months, but the most economically advantageous is 2–3 months, depending on the age and live weight of the animal at the start of fattening. More intensive and shorter final fattening period is economically profitable, however, the grower must carefully evaluate the possibilities and ways of selling the fattened carcasses because fattening pays off only at a high sale price.
