Cuantificarea potențialului de substanțe biologic active din soiul autohton Rara Neagră în condiții de microvinificare la UTM

The paper presents the results of the study of the potential of biologically active substances in Rara Neagră native red wines from Purcari vineyards produced in the microvinification section of FTA, Department of Oenology and Chemistry. The content of rutin is 7.4 mg/L, quercetin 7.4 mg/L, total resveratrol 5 mg/L and antioxidant capacity 76.67 % inhibition of the stable organic radical DPPH. At the end of the technological process of processing and treatment of grapes with obtaining the finished wine the value of SBA content is reduced by 15 ÷ 25 %. The value of chromatic parameters in the components of the Rara Neagră variety allowed to establish an intensity, nuance and purity of colour characteristic of the variety grown in the Stefan Voda region.
