Abstract: A reference text for physicians, clinical nutritionists, and other health care professionals contains 33 authoritative papers on potential interactions of dietarysalt and cardiovascular hypertension. Mechanisms by which Na may contribute to the development of high blood pressure and hypertension are discussed. Three specific themes are addressed: Na ingestion, its content in foods and fluids, and hormonal, neural, and other factors that influence salt appetite; physiological factors that regulate in vivo Na loss; and the interaction of Na at the cellular level. Papers addressing each of these themes contain suggestions relating to possible mechanisms by which Na may contribute to hypertension development. Food labeling and regulatory aspects also are addressed. (wz).
