The use of paraprofessionals to mobilize volunteers for nutrition education and community growth

Abstract: This report provides an overall assessment of an EFNEP project which was designed primarily to demonstrate that paraprofessionals could effectively recruit, train, and support volunteers who would work directly with low-income families to improve the nutritive value of their diets and to change unhealthy eating habits. A secondary objective was to have the recruited and trained volunteers provide these family members with experiences which would promote their personal growth and the development of social skills. A final objective involved an attempt to assess dietary improvements in the clients and personal growth in both the clients and volunteers.
