Abstract: Animal studies are described that were directed at improving the understanding of the effects of diet on hypertension and stroke, particularly with respect to calcium binding in sarco-plasmic reticulum function. It is concluded that certain diets provide protection from neurological and pathological sequences that develop in stroke-prone rodents, that the protective mechanism of increased dietary protein and/or methionine on stroke incidence in humans is not completely understood, and that the effect of diet on blood pressure also may be due to effects on calcium metabolism.
