Examines the principles of entrepreneurship and their application to the practice of community nutrition. Focuses on the tools of the community nutritionist: program planning, management, leadership, budgeting, social marketing, evaluation, principles of community needs assessment, and knowledge of consumer behavior. Describes current federal and nongovernment programs designed to meet the food and nutritional needs of pregnant and lactating women, infants, children, adolescents, and adults, including the elderly. Reviews some of the issues surrounding poverty and food insecurity in both the domestic and international arenas and considers how these contribute to nutritional risk and malnutrition.
