Abstract: The basics of following a diet restricted to 1000 milligrams of sodium per day are outlined in this guide, wh ich is part of a series developed by the Nutrition Subcommittee of the American Heart Association. Background informatio n is presented about the functions of sodium in the body, sources of sodium (e.g. food, water, medications), and sodium content of foods. The amount of sodium naturally occurring in foods, and sodium compounds that are added to foods during processing are discussed. Diet plans that restrict sodium to 1000 milligrams per day are presented at the 1200-, 1800-, and unrestricted calorie levels. Diet plans provide all essential nutrients and specify the number of servings of vario us foods to be included in the daily diet. Foods lists show serving sizes and permitted and forbidden foods, in each of the following groups: milk, vegetables, fruit, bread, meat, fat, and free choices. Food lists provide information on sod ium, calories, protein, fat, and carbohydrate content of an average serving from each group. Basic weight reduction prin ciples are reviewed and daily menu planning is outlined in a step-by-step procedure. Sample menus are included for each of the diet plans. Cooking tips, seasonings suggestions, and guidelines for following the diet while eating away from ho me are presented. The amount of sodium in some high sodium foods is provided to illustrate why they may not be permitted in a sodium restricted diet plan. Sample food labels show different ways that sodium information may be presented on di fferent types of foods.
