Abstract: Nutrition, disease, and the recurrent disorders that can be manifested as a result of nutrient excess and toxicity, (as they effect man and animals) are the focus of this subsection of a series on nutrition. Four distinct areas are covered: specific organisms; specific tissues; deficiencies and toxicities; and nutritional diseases. The sections and subsections present the most current scientific research and are designed to evaluate relationships, analyze problems, and develop solutions. Disciplines that impact the field of nutrition are included in the series; this volume concentrates on water- and fat-soluble vitamins, minerals, trace elements, and other nutrients such as water, calories, carbohydrates, protein, and amino acids.
