Nitrogen balance of young women consuming cottonseed protein
1977
Onley, Kathryn
Abstract: Minimum nitrogen requirements of young women for deglanded (LCP) and glandless (CSF) cottonseed flour, using the nitrogen balance method were determined. Secondary goals included assessing the nutritional status of individuals whose only source of protein for 30 days was cottonseed; determining the vitamin A and B₁₂ status of individuals consuming cottonseed protein; obtaining information on the apparent digestibility of this protein source; and comparing data for both types of cottonseed protein to identify differences in nutritional quality. The literature search concentrated on nitrogen metabolism, utilization, balance, and excretion; nitrogen requirements and plant proteins; and formula diets. Nitrogen balance was determined from excretion and intake data. Apparent digestibility did not differ between LCP and CSF. Vitamin A and B₁₂ levels decreased significantly. The feasibility of plant protein being used as a major protein source requires more research.
