A technical report for nutritionists, food industry technologists, and food policy makers describes the results of a research to determine the proper content of nutrition labeling of foods. The research involved a number of consumer surveys. The overall conclusions of the research were that: (1) public interest in food ingredients and the nutritional aspects of foods is high; (2) consumers express more interest on problems of overcomsumption rather than underconsumption or deficiency, seeking information on foods to avoid; (3) the strongest interest of consumers is in information related to known health problems; and (4) that much nutrition labeling information has been found to be confusing to consumers. The survey data broken down by demographic variables for a variety of label-related questions are summarized and discussed, and recommendations for future consumer research surveys and for consumer education approaches are included.
