Food consumption and nutrition evaluation, the National School Lunch Program

Abstract: The United States Department of Agriculture (USDAd) conducted a study (1977) of the National School Lunch Program (NSLP) to review literature on platewaste, to review factors influencing food consumption, to study and report results of plate waste in 104 schools in relation to nutritional benefits, to review and report current USDA actions, and to provide recommendations for food consumption improvement. Present USDA improvement actions include 1) proposing revisions in meal requirements; 2) implementing "offer versus serve"; 3) regulating competitive foods; 4) training foodservice personnel; 5) implementing nutrition education programs; 6) encouraging on-site preparation. Additional recommendations for local, State, and Federal action are included.
