The possible beneficial effects of dietary fiber have prompted researchers to propose the development of standard reference samples. The practical sources of such fiber types as cellulose and gum range from soy bran to xanthan. The availability of data on the content and properties of several fiber types are listed. Fiber products include citrus pulp and peanut skins. The composition data for various fiber products are presented. Such physical characteristics as hydration, bulk volume, and viscosity of celluloses, hemicelluloses, and pectins are included in numerical form. The elemental data for these fibers are also presented. Vegetable fiber has many uses in industry, and suppliers have recognized the need and opportunity to contribute to nutritional advances in fiber.
