Canned foods: Appropriate in trace element studies?

Extract: Mineral and and trace element contents of canned peaches, green beans, and tomatoes from various production lots was determined and compared statistically for storage and production lot variability. Storage time contributed more to the variability of tomatoes and green beans than did production lot. Production lot was the more important factor for peaches. The levels of change suggest that foods canned in tinplate should be avoided when long-term studies of dietary trace element metabolism are conducted. (author)
