Rice is unique in that it is milled or processed in a way that permits the grain to remain intact. Rice milling means removing the bran without damaging the starchy endosperm, whereas most other cereals are milled (or ground) to reduce the endosperm to individual or clumps of starch granules. Grinding other cereal grains eliminates the grain's structure, and new products are then fabricated from the resulting flour or grit. This article focuses on milling rice for table use and the history of how the process has evolved.
