Effect of storage on amino acid and biological quality of protein in different varieties of rice and sorghum

Extract: The effect of storage of rice and sorghum for a period of twelve months (with and without insect infestation) on the biological quality of protein and lysine, methionine and tryptophan content has been studied. The results showed that the decrease in protein quality and the above amino acids content in rice was low (about 10 per cent). On the other hand, the decrease in protein quality and the amino acids in sorghum was high (30-50 per cent). Insect infestation of these food grains during storage caused further decrease in the protein quality and lysine, methionine and tryptophan content.(author)
