Implementation of blood cholesterol-lowering diets using nutrition labels

The nutrition label is a valuable resource that can be used in various ways to facilitate implementation of Step I and Step II diets. The information on the label can be used either to precisely quantify the intake of key nutrients or to make informed food choices on the basis of the percentage daily value, nutrient content claims, or health claims. This article describes how specific information on the nutrition label (eg, total fat, saturated fat, and cholesterol), as well as nutrient content claims and health claims can be used to plan Step I and Step II diets. Dietitians can use the nutrition label as a tool to teach individuals how to follow blood cholesterol-lowering diets.
