Leaf protein concentrate from alfalfa: new developments of an old idea

Extract: Two wet fractionation processes are described which produce low fiber, high protein concentrates from alfalfa. In the PRO XAN I process, a protein rich juice with very low fiber content is expressed from freshly harvested alfalfa by a screw press or sugar cane juicing rolls. In the PRO XAN II process, the expressed juice is first given a flash heating treatment (60 degrees for 20 seconds), and the partially agglomerated chloroplastic particles are then removed by continuous centrifugation.
