Invertase-sucrose relationship in young and mature stem of sugarcane

In sugarcane, a high acid invertase (1.35 nkat ml-1) in young stem was associated with low sucrose concentration in juice (12%), and as the cane matured the acid invertase declined to 0.32 nkat ml-1 with a concomitant increase in sucrose to 19%. Sucrose concentration in the juice was negatively correlated with acid invertase (r = -0.7057). A relatively less active neutral invertase showed a peak (1.11 nkat ml-1) as the sucrose concentration was high, however, in mature stem, in which the sucrose content was maximum (21%), both acid and neutral invertases were lowered considerably, suggesting that these enzymes function differentially as the young cane grows to maturity.
