Do-it-yourself nutrition education kits

Inexpensive do-it-yourself teaching kits are useful training aids to address nutrition issues of current interest. A soda pop kit comprised of sugar, club soda, flavoring, and food color demonstrates the amount of sugar and various additives used in making soda pop. A fast food teaching kit can be assembled from empty fast-food restaurant containers, with a label attached to the container bottoms listing calories, protein, fat, vitamins, and minerals contained in a serving; a volunteer is asked to select a meal and then to report its energy and nutrient content to the class. This kit also illustrates nutrient density concepts. The kits serve as visual cues for the teacher, eliminate the need for lengthy class outlines, and allow individuals to actively participate in class. (wz)
