The effect of various combinations of temperature and moisture content on the safe storage time of Blackgram was investigated. Germination rate is a sensitive indicator of quality of grain and so is presence of mould. To determine the safe storage time the germination rate and appearance of mold was observed every week. The independent variables, storage temperatures and moisture contents ranged from 20 – 40°C and 9–18% w.b. Experiments were conducted based on a Central composite design and analyzed using response surface methodology (RSM). The response variable was safe storage time which was calculated based on two criteria's germination rate and mould growth. The response plot indicates that at higher temperatures and moisture content combination thesafe storage time is the least. The lower temperature and moisture content combination have high safe storage time. The present study provides valuable data about how long Blackgram can be stored safely at different storage conditions.
