Evaluation of leaf, must and wine cation contents and of must and wines acidity of five red wine grape cultivars (Vitis vinifera L.) grafted onto 3309 Couderc and grown hydroponically

A hydroponic culture experiment was carried out over two successive seasons (1999 and 2000) on four-year old grapevines. Theses grapevines were grown in greenhouse conditions with eight replications in a completely randomized plan. The 3309 Couderc rootstock (3309 C) was tested with five of the most important red wine grape cultivars of South-Western France: Cot (syno. Malbec), Négrette, Fer Servadou (syno. Braucol)), Tannat and Duras. The aim of this study was to study leaf, must and wine cation contents, and must and wine acidity in hydroponic conditions. Furthermore, the study also focused on the effect of cationic nutrition on must and wine acidity. The results obtained show that potassium absorption and storage in leaves and berries vary depending on the cultivar. Indeed, the Négrette cultivar presents the highest leaf and must potassium contents and the higher calcium rates are in leaves and berries, the lower potassium rates are. The highest calcium content in leaves could be observed in Cot leaves followed by Tannat, Négrette containing the lowest calcium rates. Must and wine potassium contents were positively correlated with leaf ones. However the Négrette leaves also present the highest potassium contents followed by Duras for the two experimental seasons. Tartaric and malic acids in berries declined from the veraison until the harvest. This decline was much more dramatic for the malic than for the tartaric acid. However, the Cot and Tannat presented the highest tartaric concentrations at harvest time.
