The chemical identity and dietary sources of caffeine, its intake by individuals in the United States and its known biological effects are reported. All of the caffeine present in the American diet is imported, and it is most commonly found in coffee, tea, chocolate, cola and certain medicines. It acts as a stimulant, a coronary dilator and a diuretic. Caffeine also relaxes smooth muscles, stimulates gastric acid secretion, and elevates plasma free fatty acid and glucose levels.
