Development of Process Technology for Desiccated Coconut Powder

Fully matured coconuts (Cocos nucifera) are dried for one month for complete absorption of coconuts and sorted. The average moisture content of the fresh Coconut was found 50.5% on wet basis. Two different samples of coconut powders with outer testa and without outer testa were taken for drying. A coconut sheller was used for shelling of coconuts. A knife was used to cut coconut into pieces. A pulveriser was used for milling of coconut pieces into fine powder. A laboratory model tray dryer was used for drying Coconut powder with different levels of drying air temperatures (50, 60, 70⁰C). Drying time, drying rate and moisture reduction was calculated with the help of observed data during tray drying. The desiccated coconut powder samples were taken for quality evaluation by sensory method. Survey results underlined the need of technological intervention of coconut processing. Drying of coconut powder at 50⁰C drying air temperature resulted to produce best quality desiccated coconut powders with smooth texture and bright colour.
