A guide for those who need to calculate intake of dietary fiber is provided, and features of dietary fiber of physiological importance are summarized. Dietary fiber is defined as the sum of polysaccharides and lignin that are not digested by the endogenous secretions of the gastrointestinal tract. Values for total dietary fiber can been obtained by measuring the starch, protein, and ash contents of the residue from the food or diet that is insoluble in 80% ethanol. Other measurement methods are also described. Charts depict the fiber content in wheat flours, bread, breakfast cereals, biscuits, vegetables, fruits, nuts, preserves, dried soups, beverages and extracts.
