Wheat' crackers: Not what they are cracked up to be
1983
Liebman, Bonnie
Wheat crackers are compared for their nutrient contents and are compared to the manufacturer's advertising. Food manufacturers (in an attempt to capture sales in the health foods market) are marketing products in a way that implies they contain more natural ingredients and wholesomeness than exist in the product (e.g., in fact one whole wheat product has 10 times more refined white flour than stone ground whole wheat flour). Most whole wheat crackers have a high fat content. Salt content for a 1 ounce serving ranges between 200-300 mg. Other ingredients vary widely and often include a high coconut oil content. (kbc)
